| BAKED EGGPLANT SLICES WITH CREME FRAICHE AND BASIL

2 large Eggplant
olive oil
30g Parmesan cheese, grated
200ml creme fraiche
a pinch of cayenne pepper
salt and freshly ground black pepper
2 tbsp shredded fresh basil leaves |
| Method: |
Preheat the grill to high and preheat the oven to 200 C
Trim the stalks from the Eggplant and cut each lengthways into 4-5 slices. Brush with oil and grill on both sides untill golden brown.
Arrange the slices in an oven proof dish. Stir the cheese into the creme fraiche and
season with cayenne, salt and pepper. Spoon evenly over the Eggplant. Bake in the
preheated oven for 15 minutes until bubbling.
Scatter with the basil before serving. |
