STIR-FRIED HOT AND SPICY CAULIFLOWER

3 tbsp sunflower oil
1 tsp ground cumin
1 tsp mustard seeds
1 tsp garam masala
a large pinch of chilli powder
2 cloves of garlic chopped
2.5cm piece of fresh root ginger, peeled and grated
450g cauliflower florets
1 green chilli, finely chopped
100ml water
1/2 tsp salt
55ml greek yoghurt

1. Heat the oil in a wok and add the cumin, mustard seeds, garam masala, chilli powder and garlic. Stir-fry until the mustard seeds begin to pop.

2. Add the ginger, cauliflower and green chilli. Stir-fry for 3-5 minutes.

3. Add the water to the wok with the salt, cover and cook for 5 minutes. Do not over cook or the cauliflower will go watery. Remove from the heat, add the yoghurt and serve immediately.
